The classic Boulevardier is made with bourbon; this lively variation spotlights Irish whiskey, enriched with crème de cacao–accented vermouth.
“I always thought something was missing [from the classic] so I decided to make something with chocolate,” says Spyridon Koklas, who named the drink in homage to his own Greek heritage.
While The Shelbourne makes its cacao vermouth in-house, to approximate the effect at home Koklas suggests spiking sweet vermouth with a splash of crème de cacao.
El Greco Madness
Shake all ingredients with ice. Strain into coupe glass over large ice cube. Garnish with grapefruit peel and nutmeg.
